Carrot Loaf Cake Recipe

easy carrot loaf cake recipe, perfect for afternoon tea

Ingredients  

  • 170 g self raising flour
  • 150 g brown sugar
  • 150 ml sunflower oil plus extra for greasing
  • 50 g sultanas
  • 140 g carrot coarsely grated
  • 50 g walnuts chopped
  • 2 eggs
  • 1 orange zest and juice
  • 1 tsp bicarbonate of soda
  • 3 tsp cinnamon add more or less to your preference

Instructions 

  • Juice and zest the orange and soak the sultanas overnight in the juice. (Or if you don't have time- microwave for a minute to infuse the flavour)
  • Heat the oven to 180C and grease the 900g/2lb loaf tin with a little dash of the sunflower oil. Mix the dry ingredients in large mixing bowl- flour, sugar, cinnamon and baking soda. In a separate bowl, whisk the eggs and oil.
  • Then add the grated carrot, sultanas, chopped walnuts, whisked eggs and oil into the dry mixture. Stir well to combine all ingredients together. Pour the mix into the loaf tin, place in the centre of the preheated oven, and cook for 55 minutes – or until a skewer/knife comes out clean.
  • Let the cake cool inside the tin, once cooled, it can be removed and served!

Notes

*for a special treat, swap the orange juice for Grand Marnier.
